Apple Cobbler with Cheese

Ingredients

  • 6 Granny Smith apples, peeled, cored and chopped (about 7 cups)

  • 1 tablespoon lemon juice

  • 2 tablespoons cornstarch

  • 1 ½ cups plus 1 teaspoon sugar

  • 2 ½ cups flour

  • ¾ cup brown sugar

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 2 sticks (1 cup) cold unsalted butter, cut into ½ inch cubes

  • 1 cup plus 3 tablespoons buttermilk

  • 1 cup sharp cheddar cheese, grated

Directions

  1. Preheat oven to 425°F. Butter a 9x13 baking dish. Toss apples with lemon juice. Whisk together cornstarch and sugar in a large bowl, then add in apples and toss to combine well. Transfer to baking dish and bake 10-15 minutes.

  2. While fruit bakes, whisk together flour, brown sugar, baking powder, and salt in a large bowl. Cut cold butter into flour mixture until it resembles coarse meal. Add buttermilk and cheese; stir until dough forms.

  3. Drop dough onto hot fruit mixture in mounds; sprinkle dough with remaining teaspoon of sugar. 

  4. Bake cobbler until top is golden, 25-35 minutes.
