Vegetable Pasta
Ingredients

1 cup pasta, uncooked

2 teaspoons oil
-
1 garlic clove, minced

1 teaspoon oregano
-
1 cup frozen peas
-
3 cups broccoli, chopped
-
¼ teaspoon salt
-
3 tablespoons lemon juice
-
¼ cup parmesan cheese
-
⅛ teaspoon black pepper (optional)
Directions

Cook pasta by following the directions on the package.

While the pasta cooks, heat oil in a skillet over medium heat. Add garlic and oregano. Cook for 2 minutes.

Add vegetables and salt. Cook for 7 minutes.

Drain the pasta. Add pasta to the vegetables.

Add lemon juice and parmesan cheese.

Stir to mix vegetables and pasta. Season with black pepper.
Makes 4 servings.
