Banana Bread
Ingredients

Nonstick vegetable oil spray

1 cup mashed ripe bananas (about 3 bananas)

3 eggs

¾ cup vegetable oil

1 ½ cups sugar

1 teaspoon vanilla extract

1 ¾ cups all-purpose flour

1 teaspoon cinnamon

1 teaspoon baking soda

¾ teaspoon salt
Directions

Preheat oven to 350°F.

Coat a 9x5x3" loaf pan with nonstick spray.

In a large bowl, mash bananas with a fork. Add eggs. Beat the eggs and bananas together.

Stir the oil, sugar and vanilla extract into the banana and egg mixture.

Combine flour, baking soda, cinnamon and salt together. Add this mixture to the wet ingredients and stir until just combined.

Scrape batter into loaf pan.

Bake until a tester inserted into the center of bread comes out clean, 60 to 70 minutes.

Allow to cool in the loaf pan for 10 minutes. Remove loaf from the pan and transfer to a wire rack to cool for 15 minutes.

Makes eight servings.

Notes:

Overripe bananas are perfect for baking. The more ripe the bananas, the sweeter the bread.

Don't have a loaf pan? Make banana muffins. Muffins will bake more quickly, so test muffins after 30 minutes.

Try adding ½ cup walnuts, ½ cup chocolate chips, or ½ cup of peanut butter. Stir them in with the flour.
