Pea Soup

About the Recipe

This is a simple to make, great tasting soup!

Ingredients

  • ½ tablespoon olive oil

  • 2 garlic cloves, chopped finely

  • 5 green onions/spring onions OR 1 small onion, finely chopped

  • 2 ¾ cups frozen peas

  • 2 ½ cups vegetable stock made with 1 stock cube/bouillon

  • Salt and ground black pepper

  • 4 tablespoons fat free yogurt (optional)

Preparation

Step 1


Heat oil in a large saucepan over medium heat. Add chopped garlic and chopped onions and fry for 3 minutes or so until the onions have started to break down.


Step 2


Add vegetable stock and frozen peas and bring to a boil. Once at a boil, reduce heat and simmer for 10 minutes. Remove from heat, season with salt and pepper.


Step 3


Use a handheld immersion blender to blend the soup (or a liquidizer if you prefer). Serve garnished with a tablespoon of fat free natural yogurt and ground black pepper.
